"Naked" Cakes are gaining popularity. From Tiered Wedding Cakes to Dessert cakes, the torte style cakes are elegant yet simple. They are typically sponge layers that are soaked in a flavored syrup, filled with a light filling and fresh fruit. I've seem them done in vanilla, chocolate or even red velvet layers. Then, instead of covered in icing, these cakes are usually dusted in powdered sugar and garnished with berries and such. I had an opportunity to make one this weekend (see attached photo) for a dinner party and it went over extremely well!
